Where does the best asparagus in the world come from? The answer is simple, Longhi’s. Asparagus, a native to the Mediterranean and it’s surrounding regions, is a regular item on most Italian menus. Almost always prepared simply, it is best on it’s own, showing of it’s unique woodsy, grassy, herby flavor. At Longhi’s, it’s a simple pleasure just like in most of Italy. If you’d like to replicate this dish at home, here’s all you’ll need:
The freshest greenest Asparagus available
A couple table spoons of extra virgin olive oil or butter (whichever you prefer)
Half of a ripe lemon
Salt and Pepper
Bring salted water to a boil and drop in trimmed asparagus spears.
Let the asparagus roll around until al dente.
Immediately drain and submerge asparagus in an ice bath to stop the cooking.
(Do not leave them in the bath too long. Refrigerate until serving. )
Heat olive oil in a skillet on med high heat, drop in your asparagus and toss around for about a minute.
Once the asparagus is heated remove from pan, top with fresh squeezed lemon juice and Reggiano.
